Just got the D200 and try to wrap my head around NEF files etc. Burning lots

One of my biggest gripes about the frontier (as a printer) is seeing
AUTO CORRECTIONS ramp up the contrast in pics and blowing out highlights
in a face just because of a dark background..... This correction oin
some cases can be quite significant.

Just bought a used one and can't see, hear, or feel it do anything
when switched on.  It's on a film camera so it'll take a while to get
the test images back.
Is there any other way to tell if it's working properly?

I shot maybe 600 photos of a race. All in Jpeg with 20D. Put them onto the
computer & named the file 'unprocessed' & made a new folder called
'processed'   Nothing to tech yet.
I simply stated processing from the original & when finished sharpening
