I own the Canon 350D with the standard lens kit. What settings should I use
to get photos of water droplets in mid air. e.g. waterfalls, splashes of
water etc. I know it should be a fast shutter speed but thats about it.

I don't know the answer to your question, but would suggest you might
want to give some sensation of blur, to show the movement.

A shutter speed above 1/250th should do it. The faster the shutter, the
sharper they'll be, such as in Jim's picture of the rampaging dog.

If your goal is to capture the drop in a focused, stop-action, then you want
the fastest shutter speed you can get. I have a D Rebel (300D) and use AV
(aperature priority) mode and open the aperature as wide as I can for the
lens in use, then look at the corresponding shutter speed.
If it isn't high enough, the next step would be to increase the ISO from 100
to 200, 400, 800 to see how fast you can get the shutter.
Take several photos at various settings, keep the best ones.
