Nikon or Canon Flash?

Hi - Do I have to buy either a Nikon or Canon flash to get the ability to
dial in the amount of fill-flash I want?   Or are there 3rd party
manufacturers who make such units?

You need to get one that works with YOUR camera, a Nikon won't do much on a
Canon, and vice-versa. As to the third parties, their capabilities vary by
model, some do not fully exploit the abilities your camera could support,
others have everything, and some of their own. You would want to check each
makers website or model descriptions at online camera vendors, to see what's
what. You will find that the lower the cost, the fewer the features. You
should be able to find something to suit you however.
