Any of them will.....
All you need are the drivers and the software.

I use an Epson 1640. The driver situation for scanners has improved a lot
in SuSE Linux in the past few months. Many flat bed scanners are now
supported. Crank up the setup routine in Yast2 and look at the choices it
gives you.

My Microtek Scanmaker III works quite well with Linux Mandrake 9.1. No
reason why it should not work with any other distro.
