In my experience center filters are expensive filters.
On 5x7 a 121 is not extremely wide (similar to a 90mm on 4x5).
Consequently, you would only need one if you are going to use the
edge of the coverage. I guess lenses vary, but the 121 SA I had, was
not very good near the edge of coverage and a center filter won't help
that problem. Unless you have considered these points, you may want to
make some tests before getting a center filter.
