How important is mood in your opinion.
I have been try to make my models be natural as possible, is not to
easy.
Do you have any ideas?

Very important and is quite a specialized skill.
It's not uncommon for the photographer to talk continuously to the model.
Sometimes it's direction to get them how they want them, but if they are
really clever with their mouth it's also what they say that can change the
mood of the model. For example, if you say something funny or get them to
do something fun/silly, you will get a natural laugh or smile. If you ask
them what 56 X 7 is, you will get a different expression. Perhaps the
oldest and simplest for of this is the famous "say cheese". A bit corny,
but is an example of how your mouth can change a person's expression
instantly.

If you want a good laugh on a slow Saturday, go down to the local mall and
watch the baby photographers at work. Little bub is sitting there in the hot
lights looking thoroughly bemused while the photographer and an assistant
(and the mother as well usually) are making all kinds of funny faces and
weird noises whilst waving all manner of fluffy toys at the tyke, who isn't
having any of it. If I could get away with it I'd love to get some covert
shots of *them*!

If the weren't too cheap to have *two* junior college kids working there
at the same time, they could offer further-extended albums with shots
(taken by the second empoloyed) of mom trying to get the sprog to smile or
drool or whatever the goal is. :)

It depends on the situation. There is no one size fits all answer.
