I know the battery grip for the Canon 350XT will hold 2 batteries.
Question that I have is, will it work with only one battery installed
or do you have to have two installed for it to work.
Thanks for any info you can give me.

All the others work with one so i assume this is the same.  They don't run
in parralel.  The batteries will be run down one at a time.

You assume correctly.

The Rebel XT/350D grip uses a cartridge setup which will work with one
battery, two batteries, or six AA cells using the included AA-cartridge.

I can only speak for the 20D grip, but I assume it's the same.

Definately runs OK with only one battery installed, but also definately
discharges BOTH batteries at the SAME time.

They may however have introduced a couple of diodes to prevent one battery
trying to charge the other if 1 charged and one discharged batteries are
fitted at the same time.

Bruce:
The 350XT's battery grip most definitely works with only a singel
battery.  I use mine that way as an alternative to 6 NiMH cells all
the time.
