The knob near to the viewfinder is possibly a dioptre adjustment (makes the
viewfinder image look sharper or more blurred as you turn that knob ~so you
turn it until the info display in the viewfinder is sharp).
Focus lock is when you want to focus on something and then move the camera
so that the subject is no longer in the camera's focussing spot.

For 'off center' composition ... for example you autofocus with the
subject in the center of the image, hold the shutter button down halfway
to 'lock' the focus on the subject; then recompose... the camera won't
refocus. depress completely to make the shot.
