Couple questions...
I have a Canon 10D.
- I can view a histogram after I take a picture. By chance, do some of
the newer models allow you to view the histogram before taking the pic?
- Elsewhere online someone mentioned increasing the saturation "in the
camera". I don't believe they were talking about adjusting exposure,
because this particular person didn't seem all that knowledgable
otherwise. They have a 20D, I believe. Are there specific
"saturation" settings in the newer models?
Obviously, I'm not as "up" on some of the newer models as I probably
should be. I haven't been in the market for one and have paid more
attention to other accessories and lenses, lately.

No, but the beauty of digital is that you can view the histogram
before you take the second pic.

Yes, if you shoot in-camera JPG shots there are settings to control
Saturation, Contrast, Sharpness, and Color Tone.
If you shoot RAW mode (which you should) these settings have no
effect.

None of the SLR lines that I am aware of, it would need live preview
on the LCD to give that info.

If you are shooting Jpeg's on the 10D you can adjust the saturation
under the "parameters" section of the menu, shooting RAW will render
those adjustments meaningless.

You really only need to be up on the new models if the old one doesn't
cut it any more. :-)
